A delicious pineapple tepache recipe.

Method

  1. Add the pineapple skins, spices, ginger, sugar, and turmeric to a large jar.
  2. Cover with boiled water that’s been cooled to room temp, making sure everything is submerged.
  3. Seal loosely (or cover with cling wrap + small holes) so it can breathe.
  4. Leave to ferment in a cool, dry place for 5 days, giving it a gentle shake each day.
  5. Strain, chill, and serve over ice – top with soda or add tequila if you want to take it there!
