Pineapple Pie

A delicious pineapple pie recipe.

Method

  1. Peel the pineapple and cut it into small chunks. Keep the core and put it in with pineapple when you stew it for a little extra flavour.
  2. In a bowl, combine the diced pineapple with ½ tablespoon of cinnamon, star anise, chili flakes, apple cider vinegar and the cinnamon stick.
  3. Transfer the pineapple mixture to a pot. Cook over medium heat, covered, until the pineapple softens, stirring occasionally to help it break down.
  4. Once the pineapple is tender, remove it from the heat and let it cool in the refrigerator. Remove core before you chill the mix.
  5. Once chilled, stir in the chopped mint and cracked pepper.
  6. Roll out the puff pastry sheets. Evenly distribute the pineapple mixture over the pastry, then roll it into a log shape.
  7. Pinch the ends of the pastry to seal it, then brush the outside with melted butter.
  8. Place the rolls in an air fryer and cook at 200°C for 12 minutes, or until golden brown.
  9. Roll the cooked rolls in cinnamon sugar and enjoy with fresh pineapple and a scoop of ice cream.
