A delicious nanna jones fruit cake recipe.

Method

  1. Soak the Fruit: Combine the sultanas and currants with the liquor in a bowl. Cover and let it marinate for 1-2 weeks, stirring daily for the best flavor.
  2. Prepare Dry Ingredients: Sift together the plain flour, mixed spice, and nutmeg in a separate bowl.
  3. Cream Butter and Sugar: In a large mixing bowl, cream the unsalted butter and dark brown sugar until light and fluffy. Gradually add the eggs, mixing well after each addition.
  4. Combine Mixtures: Stir the soaked fruit mixture into the butter and sugar batter until well incorporated.
  5. Incorporate Flour: Gently fold the flour mixture into the fruit batter by hand until just combined.
  6. Add Milk and Bicarbonate: Mix the milk and bicarbonate soda together, then add this to the cake mixture, stirring until evenly mixed, with marmalade/jam.
  7. Prepare Cake Tins: Line your cake tins with baking paper to prevent sticking.
  8. Bake: Preheat the oven to 150°C and bake the cake for 3 to 3.5 hours. Avoid opening the oven door for at least the first two hours to ensure even baking.
