1 boneless chicken thigh (or breast if preferred) cut in half
Bun:
1 milk bun
Cheese:
2 slices high-melt burger cheese
Pickles:
Dill pickles
Vegetables:
80g shredded white cabbage (mixed with some spicy mayo, your burger will hold better)
Buttermilk:
200ml (enough to soak 3-4 chicken thighs)
Spicy Mayo
200g full egg mayonnaise
2 tbsp smoked paprika
4 tbsp chili sauce
KFC-Style Flour Coating
200g plain flour
1 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp Cajun seasoning
1 tbsp sumac
1 tbsp dried green peas powder
1/2 tbsp chili powder (optional)
Method
Preheat Air Fryer:
Set the air fryer to 190°C and preheat for 5 minutes.Prepare Chicken:
Flatten the chicken thighs by making small cuts on the uneven side to ensure even cooking.Soak Chicken:
Soak the chicken in buttermilk for at least 1 hour. For best results, soak overnight for a juicier burger.Coat Chicken:
Coat the soaked chicken thighs in the KFC-style flour mixture, ensuring the coating is not too thick.Cook Chicken:
Place the coated thighs in the air fryer and cook at 200°C for 12 minutes.Melt Cheese:
One minute before cooking is complete, add the cheese slices on top to melt.Warm Bun:
In the last 30 seconds, add the milk bun to warm it up.Assemble Burger:
Build your burger with the fried chicken, melted cheese, dill pickles, and shredded cabbage. Enjoy!
