A delicious halloumi, guanciale and pineapple recipe.

Easy

Ingredients

450g halloumi, sliced 1cm thick
100g guanciale (can substitute with speck or bacon)
Leftover pineapple from your spooky pine
Splash of vincotto (or any other sweet vinegar)
Salt and cracked pepper
Flat leaf parsley

Method

  1. Remove rind from the guanciale and chop into batons.
  2. Heat a cast iron pan (a pizza oven works well) and add guanciale to render the fat. Once rendered, remove from the pan.
  3. Add halloumi slices to the same pan and colour one side until golden brown, then flip.
  4. Add the cooked guanciale, chopped pineapple, and a splash of vincotto to the pan.
  5. Season with salt and cracked pepper.
  6. Garnish with fresh flat-leaf parsley.
